There is nothing tastier than homemade pasta, and of all the things you could prepare- ravioli are definitely the most special! The secret to a good ravioli is not so much in the sauce but in the well-prepared dough and the mandatory creamy filling.
And what is creamier than the Moja Kravica cheese and cream? Before starting with the recipe, some advice about making the ravioli! If you have a ravioli machine and a ravioli mold- you already know what to do. If you don’t – that’s not a problem!
Ingredients
2 medium eggs, at room temperature
200 g of flour – the best is the one for homemade pasta
1 spoon of olive oi
Some spinach cubes (defrost and drain well)
3 heaping spoons of the Moja Kravica Kuhinjica cottage cheese
1 heaping spoon of the Moja Kravica creme fraiche
salt and pepper to taste
about 2 handfuls of chopped mushrooms (the best are the oyster mushrooms or brown champignon mushrooms)
a little bit of garlic – finely chopped or granulated
a rounded spoon of Moja kravica butter
a couple of spoons of Moja Kravica creme fraiche
salt, pepper, chives, thyme
a few spoons of grated Pecorino cheese (optional)
Preparation
Make the dough from these ingredients. It is best to put the eggs in oil, then little by little to add the flour and in the end, knead the dough well with hands. Wrap with transparent foil and leave it for around 30 minutes before you spread it and make the ravioli
Mix the spinach, cheese and creme fraichewith a fork and season. Cover with foil and leave the dough to rest in the fridge
Fry the garlic on the butter and add the mushrooms. When the water evaporates, add the thyme and the pepper, sprinkle some salt and turn off the stove. On the still hot frying pan, add the creme fraicheand stir well so it melts
Put the ravioli in the pan in which the water was boiling. Fresh pasta needs only about 3 minutes to be cooked. Drain the ravioli and serve with the sauce and sprinkle with Pecorino cheese.
ADVICE: the ravioli filling made from the Moja Kravica cottage cheese and spinach goes excellently also with the classic tomato sauce, so you should definitely also try that combination!
