Roll-ups are the perfect way to enrich and complete the flavor of the meat. If the side dish is carefully chosen, this dish can remind you of some really good restaurants. Nevertheless, there is something completely fascinating about the roll-ups.
Probably because it looks as if they are hiding a secret. You never know what is hiding inside of them, until you cut through them.
That is why we cannot decide whether it is better to be the one preparing them and knowing their secret – or the one waiting to be surprised while taking the first bite?
Ingredients
4 chicken fillets
200 g of the Moja Kravica Kuhinjica cottage cheese
150 g of spinach (or couple of briquettes of frozen spinach
2 cloves of garlic
100 g of smoked bacon
salt, pepper
bouquet of parsley
Moja Kravica butter
Optional: little bit of pomegranate for decoration
Preparation
Pound the chicken fillets with a meat mallet so as to get nice thin steaks, then season them with salt and pepper. Mix the Moja Kravica Kuhinjica cottage cheese with chopped garlic, add salt, chopped parsley and blanched spinach chopped into tiny pieces (or thawed and drained).
Chop the bacon into small cubes and pan fry it for a short time. Add it to the spinach and cheese mixture. Spread this filling over chicken, roll it up and secure with toothpicks. Put a little bit of butter in the pan where the bacon was fried and cook the roll-ups until they get golden – brown on all sides. Serve with cooked potatoes – and if desired, you can add a bit of freshness to the plate with pieces of pomegranate.
